On the evening of April 29/4, Hue Traditional Craft Festival 2023 with the theme "The Quintessence of Bun" was opened at Thuong Bac Park, Hue City. This is a companion event to spread the brand "Hue culinary capital" of Thua Thien Hue province.

The food festival is an opportunity to honor and promote Hue's unique culinary cultural values, especially the Vermicelli profession and famous folk dishes of people in localities inside and outside the province to converge in Hue, contributing to promoting Hue tourism development.

Speaking at the opening ceremony, Mr. Truong Dinh Hanh, Vice Chairman of Hue City People's Committee, said: The culinary festival "The quintessence of Vermicelli" with the participation of more than 50 culinary booths are culinary artisans, professional social organizations, businesses in the culinary industry inside and outside the province to preserve, preserve and promote the position and role of Hue cuisine in general and Bun craft in particular in Hue cultural life from the past to the present, honoring culinary artisans who day and night preserve and promote heritage values. Today's festival continues to contribute to building a dossier to recognize Hue Cuisine as a national intangible cultural heritage, proceeding to submit to UNESCO for recognition as a world cultural heritage.

Through the festival, Hue is also a place to preserve the quintessential values of royal and folk cuisine, contributing to the successful construction of the Hue brand - the capital of Vietnamese cuisine; This is also one of the contents contributing to the successful implementation of Resolution 54 of the Politburo on the construction and development of Thua Thien Hue province to 2030, with a vision to 2045, with the focus on building Thua Thien Hue soon to become a centrally run city on the basis of preserving and promoting the values of the ancient capital heritage and Hue cultural identity.

In particular, the quintessence of vermicelli is honored at this festival through the exhibition space of the vermicelli journey, introducing the vermicelli tools from the past to the present of artisans in Van Cu village (Huong Toan, Huong Tra, Thua Thien Hue). Here, the artisans will perform the vermicelli journey to show the historical value and quintessence of the craft with the production stages of vermicelli. Mr. Nguyen Van Tich, the only artisan of Van Cu Vermicelli village, added: This is the first time that Van Cu Vermicelli traditional village has participated in Hue Traditional Vermicelli Festival, we are very excited to introduce to a large number of people and tourists about Van Cu village's long tradition of vermicelli, about the special products from vermicelli as well as the journey to preserve traditional craft values but still promote scientific and technical advances to make the closed process for Van Cu vermicelli fiber, both to ensure the quality and traditional taste, but also to ensure the regulations on food safety and the increasingly strict requirements and expanding needs of the market. Currently, Van Cu traditional vermicelli village has 160 vermicelli production facilities, and fresh vermicelli products are now certified with 3-star OCOP.

In addition to exchanging activities, and enjoying cuisine with a unique and diverse menu, there is also a contest "Food Space in Hue Garden" which attracts the attention of the people and visitors to visit and enjoy the quintessence of Hue cuisine. In particular, the Organizing Committee will establish the Vietnam Record "Hue-style fried rice noodles with 1.000 plates serving 1.000 people to eat once on the spot" in this festive space.

Along with booths introducing three-region cuisine from 7 provinces and cities, the food festival also has 16 booths of wards and communes in Hue city. The booths will participate in the contest "Culinary Space in Hue Garden" with dishes of vermicelli, fiber, Hue traditional dishes according to the criteria: beautiful space, poetic decoration, delicious food and beautiful display.
