Ingredients for making Luc Tau Xa sweet soup for 3-4 people:
- Peeled Green Beans 150gr
- Cleaned Lotus seeds 100gr
- Tapioca flour 50gr
- Cleaned Chinese apple 50gr
- Dried tangerine peel a little, washed with hot water, chopped into fibers
- Sugar
- A little salt
- Copra (optional)
Instructions
Step 1: Process materials
– Put lotus seeds together with chickpeas to wash
– Peel tangerines, chop into micro fibers
– Soak tapioca flour until soft, rinse, wash again with water to prevent stick
– Coconut pulp grated into fibers, put in a bowl, pour hot water into then squeeze to get coconut milk
Step 2: Cooking steps
– First, put chickpeas and lotus seeds in a cooker, pour in coconut water and simmer the beans and lotus seeds
– Strain for about 20 minutes when beans and lotus seeds are simmered, stir in sugar and a little salt
– Put in Chinese apple and cook until soft soaking - Put in tapioca flour
– When the sweet soup is in a paste, stir in the tangerine peel
– Scoop the sweet soup into a bowl, add coconut milk on top and you're done
